Q: Do i need to wash it before cooking ?

No, it is ready to cook. This is delicious and hearty! I recommend it.

Q: is the inside of the bag plastic? What is the bag made out of? And is it certified fair trade?

The bag is the same sort of fortified paper product that flour and sugar come in. Inside and out is paper. As far as I know, all the grain is grown in the USA, so being "fair trade" isn't relevant in the common sense of the term.

Q: how do you cook this?

That is a very good question! I've played around with this, and settled on a 1 cup millet to 3 cups water ratio. I cook it similar to rolled oats. Bring water to boil and then simmer. Stir occasionally, as the millet will stick to the pan. As soon as the water has evaporated, take it off the heat and let sit for 5 mins, or so. I am not a very good cook, so there may be a better method.
